Ten years ago, an aspiring cook began delivering oysters to chefs and friends alike, out of the back of his car. The cook became a shucker; the car became a truck; the truck became a warehouse.

The Oyster Troff was founded on June 20, 1998. Back in 1998 the Troff averaged 250 pounds of oysters a week. In 2014 the Troff hit 10,000 pounds of oysters in one week. Our shuckers have opened over 3 million pounds of oysters.
